They are in the aster family, what makes them yellow?%26gt;%26gt;God. Believe it or not the seeds are actually sold in some places for an edible crop. Thick leaves are blanched and eaten like endive, Tender young leaves may be eaten in salad. My grandfather made wine from them but the recipe is long lost.I personally love them, I think the fields that are dotted with them in the spring sing with color!

Reply:don't know, but the whole plant is edible - brought, i was told, to America as a vegetable crop and then, well, so successful, that it is now found just about everywhere, not just in garden rows. i've seen people growing it in greenhouses, for salads, too.
